Key Responsibilities:

  • Prepare baked goods to ensure the cycle menu and recipes are followed and meal demand is met.
  • Prepare baked goods per cycle menu and recipes specified in NAVSUP P-7 as part of an integrated meal
  • preparation effort to meet meal demand within specified meal periods.
  • Prepare decorated cakes for Special Events and as requested by the customer.
  • Assists the Lead Baker in baking a variety of cakes such as pound, foam (angel) frozen, soft batters, coffee cake, cornbread, hush puppies, dumplings, muffins, fritters, breads, rolls, pizza, cookies, doughnuts, breakfast pastries, biscuits, and other products to support daily menus using the Armed Forces Recipe Service (NAVSUP P-7).
  • Performs other work-related duties as may be required.
  • Ability to understand the functions of ingredients, then use the ingredients properly to achieve desired results (manner of mixing and amount used).
  • Ability to calculate formulas for water temperature to control dough consistency, and formulas for bread and yeast-raised products and other true percentage calculations according to Armed Forces Recipe Service (NAVSUP P-7).
  • Ability to use, understand, and interpret bakery production sheets for items to be produced, proper portion size, and yield.
  • Thorough knowledge of the preparation of all types of bread and pastry items and cake decorating techniques.
  • Thorough knowledge of breakdowns or extensions of baking formulas.
  • Thorough knowledge of dough conditioners such as yeast that contain three types of functional ingredients such as ammonium salts – nitrogen growth, calcium salts – hardness in dough water and to firm gluten, and oxidizing agent to give a firmer, less sticky dough.
  • Familiarity with all professional kitchen equipment, including mixers, blenders, and dough sheeters.
    Ability to produce bread and other baked goods using manual and/or industrial processes.
  • Knowledge of raw materials for dough, dough preparation times and procedures, and various baking techniques.
  • Knowledge of recipes and production techniques for bread and baked goods.
  • Knowledge of health, safety, and hygiene regulations for food preparation.

Required Academic Qualifications, Experience, and Competencies:

  • Must have at least two (2) years of experience as a Baker.
  • Must be at least a High School, Technical, or Vocational course graduate is required.
  • Special certification or training in baking.
  • Must speak, read, and understand the English Language.
  • Must pass overseas medical screening and be in good health.
